Chocolate peanut butter cups 2

 

This is one of my most favourite recipes; so simple, delicious and a great treat every so often!

 

Base:

Ingredients:

1 cup of smooth peanut butter,

2 tablespoon of maple syrup or any other favourite liquid sweetener (brown rice syrup, agave etc.),

2 tablespoon of coconut oil,

 

Directions:

Mix all ingredients in a heatproof bowl over a pan of simmering water and allow the ingredients to melt, stirring occasionally.  Once melted pour into silicone muffin cases/tins (not right up to the top though as you will be adding the chocolate on top) and pop in the freezer till firm.

 

Topping:

Ingredients:

2 tablespoon of raw cacao or cocoa powder,

1 tablespoon of maple syrup or any other favourite liquid sweetener (brown rice syrup, agave etc.),

2 tablespoon of coconut oil,

 

Directions:

Again melt all ingredients together over a pan of hot water and once completely melted pour on the base and pop in the freezer to set. Before serving let thaw for 5-10 min and then devour!
