Try this delicious and super-simple Quick Fish Curry recipe!

 

Ingredients (serves 2):

  • 450g firm white fish fillets (cod, snapper, Pollock, or sea bream) cut into chunks
  • 1 red onion (chopped)
  • 1 green pepper (chopped)
  • 1 red chilli (chopped)
  • 2 garlic cloves (finely chopped)
  • 1 tbsp. butter
  • 2 bay leaves
  • 1 tsp. turmeric
  • 1 tsp. mustard
  • 4 cardamom pods
  • 2 kaffir lime leaves
  • 1 cinnamon stick
  • 1 tbsp. corn flour
  • Juice of ½ lime
  • 150 ml water
  • Sea salt & black pepper
  • Fresh coriander to garnish (optional)

 

Directions:

  1. Melt the butter in a large frying pan. Add the onion, garlic, green pepper, chilli, bay leaves, cinnamon stick and cardamom pods. Sweat the ingredients over low heat until transparent and pale gold.
  2. Add the turmeric and cook for further 30 seconds.
  3. Add the fish, water, lime juice, mustard and kaffir leaves, then cover and simmer over low heat for 10 mins or until fish is cooked through.
  4. When the fish is cooked, add the corn flour and stir well. Cook for another minute. Season with salt and pepper to taste and garnish with fresh coriander.
