Another simple but delicious recipe, the Peanut Butter Stir Fry. Give it a whirl and let us know how you find it!

Feel free to add ingredients and to play with the volumes, as this is designed to be a simple recipe on which you can build!

 

(To serve two)

Sauce ingredients:

  • 50g peanut butter (no hydrogenated fats!)
  • 3-5g extra virgin olive oil
  • Cayenne pepper
  • Mild chilli powder
  • Boiling water

Other ingredients:

  • 1/2 a red bell pepper (inch slices)
  • 1/2 an orange bell pepper (inch slices)
  • Small white onion (diced)
  • Small red onion (diced)
  • Bag of stir fry vegetables
  • 2 medium chicken breasts (turkey can also be used)

 

Directions:

Step 1:

Butterfly the chicken breast and placed in foreman

Alternatively slice and dice chicken, and fry in a wok on a moderate/high heat until sealed

Step 2:

Prepare and chop vegetables

Step 3:

Place the peanut butter, olive oil and seasoning in a mug, and add 15-20ml of boiling water. Stir well until mixture is one (adding more water if necessary)

Step 4:

Remove chicken when cooked through (not charred) and cut into pieces

Drain any excess water from the chicken and add the pepper and onion – reducing to a moderate heat and frequently pushing the chicken and veg around the pan.

Step 5:

Place chicken and vegetables in a wok on moderate heat for 2-3mins, before adding the stir fry veg for another 2-3 minutes.

Step 6:

Add the sauce and chicken and then stir through till mixture is evenly spread after 1-2mins

Step 7:

Turn heat right down and let the mixture warm for 2-3mins

Step 8:

Add carbs if you wish (I used rice noodles as you can just stir them in) and enjoy your meal!
