It’s the tasty treat we’ve all been waiting for; our High Protein Chocolate Pudding Recipe!
To make this recipe vegan friendly, simply use a vegan protein powder instead of whey (and ensure vegan friendly brands of cocoa and opt for 100% peanut butter).
Ingredients (makes 1 serving):
- 1 scoop of LDNM chocolate protein powder
- 2 tablespoons of peanut butter
- 2 tablespoons of cocoa powder
- 1 teaspoon of stevia (or any other sweetener)
- 6 tablespoons of unsweetened almond milk
1.) Put all dry items in a mixing bowl and mix together.
2.) Add the peanut butter and milk.
3.) Whisk all items together until completely mixed and no lumps of powder or peanut butter (if needed, add small drops of extra milk for thicker peanut butters)
4.) Pour mixture in a soufflé dish.
5.) Place dish in the microwave and heat for 30 seconds on medium. Remove the dish and and stir the cooked area around the outside toward the middle allowing the remaining mass of liquid to hit the outside edge.
6.) Heat for 15-20 seconds more, repeat the same step of stirring the outer cooked layer inside. If still liquidy after the first time, heat for 20 seconds. If there were some firm spots, stick to 15.
7.) Allow it to sit for 1 minute. Then run a butter knife around the edge of the dish, turn the dish over onto a plate.
Optional: decorate with melted dark chocolate, almonds or even fresh pomegranate.
