Store bought mayonnaise is often very unhealthy, made with low quality oils and flavourings/preservatives. Here’s how you can make your own healthy (NOT low fat), mayonnaise – great for increasing your fat intake and with sweet potato wedges!

  • 5 egg yolks
  • 1 tablespoon of lemon juice
  • 1 teaspoon of regular/Dijon mustard
  • Salt and pepper (to taste)
  • 100g olive oil
  • 100g coconut oil
  • Optional (chilli powder to taste)
  • Approx nutrition values (per 10g serving)

  • 0.1g carbs

Allow the egg to warm to room temperature and separate the yolks from the whites (the whites can be kept in a container and refrigerated for a few days)

Put yolks in a bowl and whisk/blend until smooth/consistent

Add lemon juice, mustard, salt and pepper (and chili powder) then blend/mix until consistent

Warm the coconut oil until it has melted

SLOWLY add oil while blending or whisking at low speed – starting with OLIVE OIL! Add A DROP AT A TIME. The oil will not mix well with the yolks to begin with, but once the mixture starts to change consistency and thickens you can add the oil slightly faster (whisking all the time!)

Store remaining mayo in Tupperware; should be safe in the fridge for around a week
