Saag is a traditional Punjabi curry dish made from spinach and/or mustard leaves. Saag is very low in carbohydrates (especially sugars) and when made with chicken, is a very lean meal – perfect when you are craving a curry but don’t want to break your diet!


Ingredients (4 Servings):

  • 200g young spinach 
  • 1 large onion
  • 2 garlic cloves
  • groundnut oil
  • 4 cardamom pods , seeds crushed
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 3 tsp ground cumin
  • 2 tsp ground coriander
  • 4 tomatoes
  • 200ml chicken stock
  • 500g lean chicken
  • Tabasco to flavour (optional)



  1. Rinse the spinach with boiling water (in a colander is the easiest way to do this!), drain and chop then set aside
  2. Grate the onion and crush the garlic, cook in a non-stick pan with 2 tsp of oil until the onions begin to brown
  3. Add the spices and crushed cinnamon pods and cook for 2-3 mins
  4. Chop the tomatoes and add, with the stock, to the pan and simmer for 15 mins
  5. In a separate pan (or Foreman style grill) cook the chicken and set aside
  6. After the saag has simmered for 15 mins, ass the chopped spinach and cook for 5 mins
  7. Blend the saag in a food blender or with a stick blender and return to pan
  8. Add the chicken to the saag and cook gently for 5 mins until done – flavour with tabasco while cooking if you like your saag to have a little kick!
