Savoury Veggie Pancakes

 



Here’s another delicious recipe from the @FoodGrinder some Gluten Free, Savoury Veggie Pancakes (spinach and sweet potato)!

This amazing creation ties in with Shrove Tuesday, but is a delicious savoury take on traditionally sugary pancakes. Ideal for part of your main course rather than a pudding.

 

Ingredients:

1 sweet potato

1 bunch of spring onions

2 tablespoons of almond flour

2 eggs

1 cup of spinach

 

Method:

1.) Chop up the sweet potato into cubes and then microwave for 7 minutes

2.) Chop all the spring onions and spinach

3.) Add all ingredients into a mixing bowl and stir well

4.) Shape into patties and fry off on each side until golden (5-8 minutes)
