This is an extremely popular baking recipe from our book, Leaner, Fitter, Stronger: Chocolate Coconut Cookies!

 

Ingredients (makes 12 cookies):

  • 130g rolled oats
  • 75g coconut oil
  • 1 egg
  • 4 tablespoons of honey
  • 30g cocoa powder
  • 25g desiccated coconut
  • 50g chocolate chips (optional)

 

Recipe:

  1. Preheat the oven to 190C/Gas 5 and line a baking sheet with baking parchment.
  2. Put the oats in a food processor and process to grind them down to a flour. Add all the remaining ingredients, except the chocolate drops, to the food processor and blitz until well combined. Remove the blade and stir in the chocolate chips, if using.
  3. Form the dough into 12 balls by rolling portions between your palms. Place the balls on the prepared baking sheet and press down on each to form a round about 5mm thick. Bake in the oven for 15 mins, until crisp on top but still a little gooey in the middle. Allow to cool on the baking sheet before serving.
